Digby Cakes (after) Easter Cookies.

Digby Cakes (after) Easter cookies are the perfect way to use up those leftover chocolate eggs! Deliciously buttery, filled with chunks of Easter chocolate, and topped with speckled eggs and a pinch of sea salt - who knew Easter treats could get even better?



Hi Louie, thank you so much for having us in your kitchen. With Easter just around the corner, what are your go-to table styling pieces for creating that perfect Easter table? 

To create the perfect Easter table, aside from delicious baked goods, I always go for an eye-catching tablecloth and fresh flowers. The tablecloth acts as a great backdrop for the spread, while the flowers add a pop of color and freshness. For this shoot, I found some adorable Easter Daisies at the local market, which added the perfect touch!



Easter Egg Cookies

Ingredients (Makes approx. 20 cookies)

150g unsalted butter (room temperature)

80g brown sugar

80g caster sugar

1 egg

2 teaspoons vanilla extract

225g plain flour

½ teaspoon bicarb soda

¼ teaspoon salt

150g Easter eggs (roughly chopped; approx. 8-10 medium Cadbury hunting eggs)

20 speckled eggs (1 small packet)

Flaked sea salt (for sprinkling)



Method

1. Preheat the oven to 160°C (fan-forced) and line 2 baking trays with baking paper.

2. Cream the butter and sugars together until pale. Add the egg and vanilla extract, then beat until well combined.

3. In a separate bowl, whisk together the plain flour, bicarb soda and salt.

4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped Easter eggs.

5. Weigh out approximately 35g of the cookie dough and roll into balls. Gently press each ball down to flatten slightly. Top each cookie with a speckled egg and a sprinkle of flaked sea salt.

6. Bake for 15 minutes, or until golden brown. Allow the cookies to cool on the tray for 10 minutes before transferring to a wire rack to cool completely.

7. Enjoy!
